This is a brilliant series of cook books with a wide variety of titles including 101 Low-Fat Feasts, Starters & Light Meals, Pasta, Rice & Noodles, Meat, Fish & Seafood, Veggie-friendly, Desserts and my favourite 101 Chocolate Treats. These handy little books have an easy to follow recipe and illustration on each page. Delicious!
They also gives information on how many calories each dish contains and fat content etc.

Chocolate Fudge Easter Cakes
FOR THE CAKES
140g/5oz butter, softened, 140g/5oz golden caster sugar, 3 medium eggs, 100g/4oz self-raising flour, 25g/1oz cocoa powder, sifted
TO FINISH
85g/3oz chocolate, chopped, 85g/3oz butter, softened, 140g/5oz icing sugar, sifted 2 x 35g packets white chocolate Maltesers, mini foil-wrapped chocolate eggs
Takes 30 minutes, plus cooling* Makes 16
- 1. Preheat oven to 190˚C/Gas 5/fan oven 170˚C. Put 16 gold cases into a bun tin.
- 2. Tip all the ingredients for the cakes into a bowl and beat for 2 minutes with an electric mixer until smooth. Divide among the cases so they are two-thirds full, then bake for 12-15 minutes until risen. Cool on a rack.
- 3. Melt the milk chocolate in a bowl over a pan of hot water (or microwave on High for one minute). Cream the butter and icing sugar together, then beat in the melted chocolate to make a smooth frosting. Spread on the cakes, then decorate with Maltesers and chocolate eggs.
